I have done plenty of 4 and 6 cylinder EMU Black installs, which of course are no trouble.
I need to do a V8 soon, does anyone have a recommendation for ‘coil on plug’ coils to run in a wasted spark fashion? I expect draw from the ignition output would still be quite low even when controlling 2x modern coils, so I don’t expect problems, but I would like to be sure or here from experience.

Whatever smart coils fit. UZ fit the VW coils well, if nothing fits then LS coils.
I don’t even bother with 2 pin dumb coils anymore. draw on a 3-4 pin coil is pretty negligible.
I always opt to run each ign trigger wire all the way back to the ECU and use output 1,2,3 and 6 since they are all on the grey connector.

Agreed on the dopey coils, not a fan. The usual VAG offerings were the first thought, but I think we’ll go Honda as they seem to draw very little overall (of course trigger wise all of these smart coils seem fairly insignificant).
I’m also a fan of keeping them all on the grey connector and tend to do this out of habit.
